Kale Cobb Salad
Ingredients
For the Salad
- 2 cups dinosaur kale Can use regular if prefer
- 1 cup watercress remove hard stems
- 1 tbsp pomegranate seeds
- 1/4 cup cup avocado sliced thin
- 2 tbsp canned garbanzo beans rinsed and drained
- 1 hard cooked egg sliced
For the dressing
- 2 tbsp balsamic vinegar
- 3 tbsp Extra virgin olive oil
- 1 tsp Dijon mustard
