Holiday Roasted Potatoes
Ingredients
- 8 Red Potatoes small red potatoes, skin on, halved and cut in 1/4 in slices
- 1 yellow onion diced
- 3 tbsp Extra virgin olive oil
- 2 tbsp fresh oregano chopped, or 1 tbsp dried oregano
- 1 tsp sea salt
Instructions
- Preheat oven to 450 degrees. Place potatoes, onions, and orgeano in a large ti or large pyrex baking dish.
- Mix in olive oil and salt, and coat well.
- Bake for 90 minutes, stirring occasionally. The longer you cook the potatoes, the crispier they will be. Serve and enjoy.
