Heart-Healthy Arugula Salad
Ingredients
- 3 cups arugula
- 1 cup Radicchio
- 1 cup Endive
- 1/2 cup cucumber skin on, sliced in 1/4 inch discs
- 1/2 cup Radishes sliced thin
- 1/2 cup beets pre-cooked vacuum seeled kind, sliced
- 1/2 cup Canned Chickpeas rinsed and drained
- 1/4 cup Pitted Black Olives sliced
- 1/4 cup Walnuts pieces
- 2 tbsp Parmesan cheese shredded
- 3 tbsp Fresh lemon juice
- 3 tbsp Extra virgin olive oil
- 1/2 tsp sea salt
Instructions
- Toss arugula, radicchio, and endive leaves together.
- Top with cucumber, radishes, beets, chickpeas, and olives.
- Then top with walnuts and cheese.
- Mix in lemon juice, olive oil, and salt, and serve.
