Grilled Steelhead with Avocado Cilantro Dressing
Ingredients
- 1 lb steelhead trout filet
- 1 avocado ripe, pitted and out of the skin
- 1 tbsp fresh lime juice
- 2 tbsp apple cider vinegar
- 3 tbsp water
- 1 tbsp Extra virgin olive oil
- 3 tbsp Cilantro Leaves
- 1/2 tsp sea salt
- 1/2 tsp cumin
- pinch Cayenne Pepper to desired taste
Instructions
- Preheat barbecue to medium heat. Sprinkle steelhead with salt and pepper and set aside.
- In a blender, combine the remaining ingredients and blend until smooth.
- Place fish on the barbecue and cook for 7-10 minutes until fish starts to flake with a fork.
- Place fish on a plate with avocado dressing on the side, and serve immediately. Top fish with avocado dressing as desired.
