Grilled Pineapple Pork Chops
Ingredients
- 4 Center Cut Pork Chops bone in
- 1/2 tsp fresh rosemary chopped
- 1/4 cup Apple Cider
- 2 tbsp Low Sodium Soy Sauce
- 1 tsp garlic chopped
- 2 tsp Fresh lemon juice
- 8 circular slices Fresh Pineapple about 1/4 inch thick
- 1 tbsp Extra virgin olive oil
- 1 tbsp fresh mint chopped
- salt and pepper to taste
Instructions
- Combine cider, soy sauce, garlic, and lemon juice.
- Place pork chops in this marinade and let sit 15 minutes.
- In the interim, brush pineapple slices with olive oil and then sprinkle with chopped mint.
- Place pineapple slices on top rack of barbecue and let cook on medium heat about 20-25 minutes, turning half way through.
- Remove pork chops, sprinkle with rosemary, salt, and pepper, and place on grill, cooking 10-12 minutes, again, also turning half way through cooking time.
- Place 2 pineapple slices on top of each pork chop and serve.
