Goddess Burrito Bowl
Ingredients
For the Bowl:
- 1 cup brown rice cooked
- 1 cup Baby Spinach Leaves chopped
- 1/2 cup canned black beans rinsed and drained
- 1/2 avocado ripened, peeled, and cut into small pieces
- 1/2 cup Carrot sliced
- 1/4 cup red onion diced
- 1/4 cup Chopped Fresh Cilantro
For the Dressing
- 1/2 avocado ripened and peeled
- 1/4 cup fresh lime juice
- 2 tbsp Extra virgin olive oil
- 1 tsp garlic
- 1/8 tsp Cayenne Pepper
- 1/2 tsp sea salt
Instructions
For the Bowl:
- Start by placing half a cup of brown rice each into 2 bowl as the first layer.
- Next, layer the remaining ingredients into each bowl. The spinach may wilt a bit from the warm rice, which is fine.
For the Dressing:
- In a blender or hand immersion blender, mix all of the ingredients together until it is smooth and creamy.
- Using a spoon, spoon approximately one tablespoon of dressing on top of each bowl. Can refrigerate extra dressing for use as a dip or on other salads or great on tomatoes!
- Toss the "salad" with the dressing and serve.
