Gluten Free Cauliflower Lentil Burger
Ingredients
- 1.5 cups cauliflower florets
- 1 Tbsp Extra virgin olive oil
- 1 cup cooked brown lentils can use canned
- 3 Tbsp old fashioned oats crushed in a blender or between your hands
- 1 tsp cumin
- 1 tsp Tumeric
- 1 tsp chili powder
- 1/4 tsp sea salt
- 1 Tbsp ground flax
- 1 Tbsp coconut oil
Instructions
- Preheat oven to 450 degrees.
- Coat cauliflower with olive oil and place on baking sheet. Bake for 15 minutes or until golden.
- Chop baked cauliflower, and combine in a bowl with lentils. Add in oats, spices and ground flax, and mix well.
- Form 4 patties with the mixture.
- Heat coconut oil in a skillet on medium heat. Add in patties, cooking 5 minutes per side or until golden. Serve inside a lettuce leaf "bun" with your favorite toppings.
