Garlicky Steamed Mussels

Garlicky Steamed Mussels
Ingredients
- 1 tbsp coconut oil
- 1/4 cup garlic chopped
- 1/2 cup Shallots chopped
- 1/4 cup white cooking wine
- 1/2 cup vegetable broth
- 1 can diced tomatoes
- 1 tbsp unsalted butter
- 2 lbs raw mussels cleaned well
- 1/4 cup mixed fresh herbs of your choice basil, oregano, parsley, sage, thyme
Instructions
- In a large Dutch oven or soup pot, heat coconut oil. Add garlic and shallots and cook for one minute.
- Add in white cooking wine, vegetable broth, and diced tomatoes, bring to a boil. Once boiling, lower the light and let simmer for 5 minutes covered.
- After 5 minutes, add in butter and let melt completely. Add in mussels, cover once again, and cook for 5-10 minutes until all of the mussels have opened.
- Remove from heat once mussels are all open, mix in fresh herbs, and serve immediately. Can save left over sauce to use as a soup base.
