Crunchy Kale Apple Salad
Ingredients
- 4 cups kale washed and chopped
- 1 Apple skin on, diced
- 1/2 cup jicama juliene or diced (can substitute with radish)
- 1 cup cucumber skin on, quartered and sliced
- 1/4 cup slivered almonds
- 3 tbsp Extra virgin olive oil
- 2 tbsp Fresh lemon juice
- salt and pepper to taste
Instructions
- Combine all salad ingredients together. Top with oil, lemon juice, salt, and pepper, and mix well.
