- 1 cup brown rice
- 1 13.5 oz can light coconut milk
- 2 tbsp dried, unsweetened coconut shredded
- 1/2 tsp sea salt
- Place rice, coconut milk, 1/2 cup water, coconut and sea salt in a medium sauce pan. Bring to a boil, cover, and simmer for approximately 45 minutes until all of the water has evaporated.
