Carmelized Figs Stuffed with Goat Cheese
Ingredients
- 2 cups Large Fresh Figs about 8 figs
- 1 tbsp coconut oil
- 1 tbsp honey
- 2 tbsp Soft Goat Cheese
Instructions
- Cut the top stems off of the figs so they have the white flesh and seeds showing.
- Heat coconut oil in a large skillet. Place figs, open flesh side down, in the heated coconut oil, and let cook on medium heat for about 3 minutes.
- Turn figs over and allow them to cook on the closed skin side down for about 2 more minutes.
- Turn figs over once again to open flesh side is facing down, and add honey to the hot skillet. Turn heat off, but shake pan around so the melted honey now oozes between all the cooked figs.
- Remove figs from skillet (caution, they will be hot so use tongs) and place on a plate, open flesh side up. Using a knife, place approximately 1/4 teaspoon of goat cheese inside the middle of each fig. The cheese should start to immediately soften and melt as it touches the warm fig.
- Serve immediately or leave at room temperature and serve later.
