Beer Can Chicken
Ingredients
- 1 whole chicken about 3-4 pounds, cleaned
- 1 tbsp canola oil
- 1 tsp kosher salt
- 1 tbsp dry rub any kind you like
- 1 can beer any kind you like, pour about half out
Instructions
- Preheat barbecue to medium heat.
- Pat chicken dry. Rub olive oil all around the outside of the chicken.
- Using your hand, rub salt and dry rub all around the outside and inside cavity of the chicken.
- Place chicken, legs down, around the beer can, and place directly on the barbecue.
- Cook the chicken for approximately 1 1/4 hours until the skin is crispy, and then juice runs clear when poking the chicken thigh with a fork or knife.
- Remove chicken from grill and allow it to sit and cool or a few minutes. The beer can will be VERY hot. Once cooled, remove the beer can carefully so not to spill any beer, and cut the chicken in pieces or carve and serve.
