Balsamic Raspberry Arugula Salad
Ingredients
Salad
- 2 cups Arugula Leaves
- 1 cup cucumber sliced, skin on
- 1/2 cup canned chick peas rinsed and drained
- 1/2 cup Black Olives pitted and cut in half
- 1/2 cup fresh raspberries
Balsamic Dressing
- 1/4 cup balsamic vinegar
- 1/2 tsp Dijon mustard
- 1 tsp maple syrup
- 2 tbsp water
- 2 tbsp Extra virgin olive oil
Instructions
Salad
- Place arugula leaves in a large bowl. Top with remaining salad ingredients
Balsamic Dressing
- Place all dressing ingredients in a container and cover. Shake well.
- Dress salad when you are ready to serve it.
