9 Layer Mediterranean Dip
Ingredients
- 1/2 cup humus
- 1 cup cucumbers quartered and sliced
- 3/4 cup cherry tomatoes quartered
- 1/2 cup canned artichokes coarsely chopped
- 1/2 cup roasted red peppers coarsely chopped
- 1/4 cup tahini
- 1/2 cup pitted kalamata olives coasrely chopped
- 1/4 cup feta cheese finely crumbled
- 1 tbsp dried dill
Instructions
- Begin by spreading a thing layer, using 1/4 of the humus, along the bottom of a shallow dish, like a Pyrex or shallow Corningware. The add the cucumbers and tomatoes on top of the humus.
- Next spread the fest of the humus on top of the tomatoes and cucumbers, and then pile the artichokes and roasted peppers on top.
- Continue layering by spreading the tahini over the artichokes and vegetables, and then add on the olives and feta cheese. Sprinkle the dill all around on top. Serve with crackers or pita chips.
